Vegan Winter Crisp

A sweet dessert that can be enjoyed during the holidays that is not overloaded with sugar or fat. The best part is that this dish only takes about 15 minutes to put together in a mixing bowl before baking for 50 minutes.

Ingredients

  • 4 medium apples, cored and diced
  • 2 medium pears, cored and diced
  • 1 cup fresh cranberries, larger ones halved
  • 1/3 cup pure maple syrup
  • ½ lemon, juiced
  • 1 ¼ cups whole wheat flour
  • 1 ½ cups rolled oats
  • 1/3 cup brown sugar, packed
  • 1 tsp ground cinnamon
  • ½ tsp salt
  • ½ cup coconut oil, solid

Directions:

  1. Preheat oven to 425°F
  2. In a greased baking dish, combine apples, pears, cranberries, syrup, and lemon juice.
  3. In medium bowl, combine all remaining ingredients, then cut in the coconut oil, forming a crumbly mixture.
  4. Top the apples with the crumble mixture, then bake uncovered for 50 minutes. Serve warm.

Notes:

  • Can add or swap any fruit that is desired. Recommendations: blueberries, strawberries or peaches.
  • For a better quality crumble, chill the crumble mixture in the refrigerator for at least 15 minutes before adding on top of fruit mixture.
  • The fruit can be peeled if desired, but the skin does allow for the dish to have a variety of color, hold the fruit in shape, and maintain more fiber.
  • This dish can be made two days in advance if planning ahead. When baking has finished, cool the dish completely on a rack and then tightly wrap with plastic wrap and chill. To reheat, unwrap the plastic wrap and place into a 300°F oven until hot. Cover with aluminum foil if needed to prevent excess browning on top.
