Healthy Lemon Parmesan Roasted Asparagus
This asparagus recipe is quick and easy. Crisp asparagus is tossed with lemon zest, Parmesan cheese and olive oil to make the most delicious, low carb and gluten-free side dish. Great for serving with chicken or fish.
Ingredients
- 2 lbs asparagus
- 1 tbsp. lemon zest
- 1 tbsp lemon juice
- 1 tbsp olive oil
- 1/4 teas salt
- 1/4 teas pepper
- 1/4 cup Parmesan cheese
Instructions
- Preheat oven to 400 degrees. Line a baking sheet with parchment paper or silpat baking sheet.
- Line cleaned, trimmed asparagus on baking sheet.
- Whisk together lemon juice, zest, olive oil, salt and pepper.
- Brush asparagus with lemon mixture, then sprinkle Parmesan on top.
- Bake at 400 for 12 minutes or until asparagus is tender.
Substitutions
- Olive Oil: You can substitute avocado oil, butter or ghee.
- Cheese: You can use mozzarella cheese in place of Parmesan.
- Asparagus: You can use brussels sprouts or broccoli in place of asparagus.
